Hip and Cool muffins

In light of my 3-year old telling me that I was old for trying to maintain a healthy diet I’ve decided to share this adapted recipe that was given to me by my friend. They contain NO bran and NO raisins (and yet they’re somehow still delicious).

 

Chocolate Zucchini Muffins

3 eggs

1 cup avocado oil

1/2 cup sugar

3 cups grated zucchini

2 tsp vanilla

1 1/2 cups whole wheat flour

1 1/2 cups all purpose flour

1 tsp cinnamon

2 tsp baking soda

1/2 tsp baking powder

2 tbsp (heaping) cocoa

1 cup of whatever you want; I like to use a combination of chocolate chips, goji berries, sunflower seeds, chia seeds, or pumpkin seeds

I’m not a particularly finicky person when it comes to baking. I’m a fan of throwing it in a bowl, mixing it up, and seeing what the result is. So, that’s what I do here. I mix all of the ingredients in a bowl, line my muffin trays and bake at 350 degrees for about 18 minutes.
